Selim Evin is an independent bottler and whisky curator best known as the founder of Chapter 7 Whisky, an independent Scotch whisky company that began as a passion project and evolved into an internationally recognised, award‑winning independent bottler.
His whisky selections have received significant international recognition, including four “Whisky of the Year” awards in Jim Murray’s Whisky Bible, as well as Gold and Master medals at major international competitions such as the IWSC (International Wine & Spirit Competition) and the Scotch Whisky Masters.
Over the years, Selim has developed long‑term relationships within the Scotch whisky industry, working with distilleries, brokers, and private cask owners to source exceptional and singular casks. Under the Chapter 7 label, he has bottled numerous exclusive casks and private releases for corporations, high‑net‑worth individuals, premium retailers, and travel retail, in addition to limited releases for whisky enthusiasts and collectors.
His approach to whisky is rooted in the idea that each cask represents a moment in time — something to be documented and bottled rather than reproduced. His work focuses on individuality, maturity, and character rather than volume or brand building.
With Whisky & Beyond, Selim focuses on bespoke bottlings, private cask projects, and exclusive releases for collectors, clubs, and institutions, continuing his work as a curator of rare and singular spirits. Selim is currently working with Burnobennie Distillery as Whisky Manager.
